    ➤ In the 1990s, Dutch scientists isolated glucosinolates as the source of bitterness. Older varieties with lower levels were cross-bred with modern hybrids to create sweeter sprouts. Cooking method still affects bitterness perception.

  • Can a Plant Grow Inside You?
